Kiss the Ground’s Easy Peasy Buckwheat Pancakes

You’ll need: 

  • 1 cup Meadowlark Organics Buckwheat Flour
  • 1 cup Perennial Pantry All-Purpose Flour with Kernza
  • 2 tbsp sugar, Lineage Provisions Honey, or maple syrup
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 ¾ cups whole milk or oat milk
  • 2 large eggs
  • 3 tbsp melted butter or Dr. Bronner’s Coconut Oil
  • Extra butter or oil for the skillet

Directions:

  1. In a bowl, whisk flours, baking powder, salt, and sugar (if using sugar).
  2. In another bowl, whisk milk, eggs, melted butter, and sweetener if using honey or syrup.
  3. Pour wet into dry; stir gently until just combined — batter should be slightly lumpy.
  4. Heat a lightly greased skillet over medium heat.
    1. Scoop ¼ cup batter per pancake.
    2. Cook until bubbles form, flip, and cook until golden.
  5. Serve warm with butter and more honey or syrup if desired.
