Most milk on the market contains the A1 beta-casein protein, often claimed to cause various health and gut issues in humans. Milk that contains only the A2 protein may be more digestible by humans
“Cream top” is the butterfat that rises to the top of milk. Most commercial milk is homogenized, or processed so that the fat does not separate and rise to the top, to create a more consistent texture.
Most commercial milk is pasteurized, or heated at high temperature to kill potentially harmful bacteria. This process can also kill good bacteria and active enzymes that may help digestion and support gut health.
Opt for dairy from small family farms, or source locally, when possible.
Look for milk that is minimally processed and comes from cows that are
