Mesquite trees are actually legumes, which can form relationships with soil bacteria that convert atmospheric nitrogen into a form plants can use. Their fiber-and-protein-rich bean-like seed pods are a staple heritage food of indigenous communities in the U.S. Southwest and Mexico, and can be used to make everything from gluten-free flour to candy.
